First, I wanted to explain myself just a little, because I am interrupting the “normal” wedding related content to bring a recipe. My reason, because I think other things can be shared, and to be honest, I’m tired of conforming to the industry standard of “perfect”. So today I bring you a 10 year old plate with my vegetarian dish on top of it, and an explanation as to why I’ve decided to go meatless in my diet.
Why I decided to go meatless
If you follow me on Instagram (click here to follow me) my husband has been really sick for a year! At his young age of 33 we have both seen our fair share of hospital stays, and doctors visits. I cringe at the thought of stepping in another office, but that has been our way of life. I’m doing the best I can to embrace this season in our lives, and I know eventually we will have an anwser to his health issues. I will share our story at a later date, but for now, I will leave it at that.
I was over at a friends house one night, and she suggested I watch a documentary. She had explained she quit eating meat after watching it. I decided to watch as well. The movie is called What The Health, and you can watch it on Youtube by clicking here. I must warn you, please eat all your meat before you watch it (I’m laughing). I now have a freezer full of chicken that I have no idea what I’m going to do with!
It’s not one of those movies that talks about animal cruelty. This movie is about how our bodies process what we are eating. Most of the movie made so much since, and as I watched it. I thought of Dustin (my husband).
How I feel since going meatless
If your wondering how it feels going meatless. I feel way more energized! I have lost inches in my waist, and I’m not doing anything different other than I am not eating meat. I am also eating more! I did notice I needed to eat more once I stopped eating meat, but who doesn’t like to eat? I love food HA! I am less bloated as well!
Even if your not into the meatless thing. I hear from all my brides a few months before their wedding they are going on a diet, or my moms are going on diets before their sessions. Ladies this will help you, along with exercise etc. They say it takes two weeks to rid your body of the toxins from meat. Two weeks isn’t that long. To be honest, that is all I wanted to do when I first tried this crazy idea, and then after the 2 weeks I could feel the differnce. My assistant Brooke even said she could see a differnce in her daughters asthma by not giving her bacon anymore. That is HUGE!
My Final thoughts on this crazy idea
I’m not saying meat is horrible, but what I am thinking is that we consume way to much of it! Has Dustin went completely meatless, no, has Brooks (my son), no. I think it’s finding a healthy balance. The meat lovers pizza is not one of them! Just watch the movie and make a decision for yourself.
I’m going to start sharing recipes that my boys will eat, because with all men anything healthy makes them want to vomit. My hope is that whether your, a mom, a bride/ groom to be, or just living on your own that you will find some of these recipes yummy as well.
Let’s get cooking
Ingredients
1 cup lentil, rinsed
2 cups vegetable broth
1 teaspoon of salt
1/2 teaspoon of pepper
2 teaspoons of chili powder
2 teaspoons of cumin
1 teaspoon garlic pwder
1 teaspoon dried oregano
15 oz can of corn, drained and rinsed
15 oz can of black beans, drained and rinsed
1lb bag of tortilla chips
1 1/2 cup shredded mexican cheese
1 cup shredded lettuce
1 cup of tomato diced
1/3 cup fresh cilantro
How to make it
Pre heat oven to 350F
